Ingredients
  1. 4oz / 110g margarine or butter
  2. 8oz / 225g sugar 2 eggs – *don’t beat just very lightly mix together
  3. 4oz / 110g plain flour
  4. ½ level tsp baking powder
  5. ¼ tsp salt
  6. 4 level tablespoons cocoa
  7. Fudge icing for topping (if required)
  8. 8oz / 225g icing sugar
  9. 3 level tablespoons cocoa
  10. Sieve together and then add
  11. 1 egg yolk
  12. 2oz / 55g very soft margarine or butter
  13. 3 tablespoons hot water

  15. Brownie Tray
Instructions
  1. Melt margarine and sugar in pan over a low heat. Remove from heat and add all dry ingredients, then *eggs.
  2. Mix together with wooden spoon (takes seconds).
  3. Turn into a greased, non-stick 8” x 8” x 2” tin and bake at gas mark 4 / 350oF / 180oC for 30 – 35 minutes. It may not seem as if it is cooked but needs to be a bit soft.
  4. Cut into squares or fingers whilst warm BUT leave to cool completely before turning out.
  5. Beat until smooth and spread on top of cooked cake.
